Pasta with Asparagus, Tomatoes and Feta

  1. 1/2 pounds - fettucine or your favorite pasta
  2. - olive oil
  3. 1 pounds - asparagus cleaned, cut into 1-inch pieces
  4. 1 cups - grape tomatoes halved
  5. - feta cheese


Bring 2 quarts of water to a boil. Add about 2 tablespoons of olive oil and some salt to the water for flavor and to keep pasta from sticking. Add pasta and cook uncovered, stirring occasionally, for about 10-12 minutes, to taste.
In the mean time, drizzle about 2-3 tablespoons of olive oil into a skillet over medium heat; add asparagus pieces and saute for 5-7 minutes. Add tomatoes.
Drain pasta and place into skillet with asparagus and tomatoes. Toss to combine and add feta chunks to pasta.
Add salt and pepper to taste.
