Pasta, Ham and Peas

Ingredients:

  1. 3 tablespoons - butter divided
  2. 1 - small onion finely diced
  3. 1/2 cups - fresh bread crumbs
  4. 12 ounces - wide egg noodles
  5. 3/4 cups - chicken broth
  6. 1 cups - ham cubed or sliced
  7. 1 cups - frozen peas
  8. 3/4 cups - half and half
  9. - juice and grated zest of 1/4 lemon
  10. - salt and ground pepper
  11. - finely chopped parsley
  12. - freshly grated Parmesan

Directions:

Bring large pot of water to boil and add some salt. While it's coming to a boil, in a wide pan over medium-low heat, melt 2 tablespoons of the butter and saute the onion until it's very soft and starting to turn golden, 8-10 minutes. Meanwhile melt the other tablespoon of butter in a small pan and fry the breadcrumbs over medium heat until they are brown and crisp. Scrape them into a bowl and set aside.
When onions are done, dump noodles into boiling salted water and stir.
Add the broth, ham and peas to the onions; turn up the heat and boil vigorously until broth is reduced by about half. Then add the half-and-half and continue to simmer while adding the lemon zest and juice and salt and pepper to taste (taste the mixture first to see if ham has already added enough salt).
Turn down the heat to low under the sauce; drain the pasta. Stir pasta into the sauce, stir in parsley and taste. If needed, add a little more salt, pepper, lemon juice or zest or a bit more half-and-half.
Serve in warm pasta bowls and pass the cheese and breadcrumbs for topping. (Or top the mixture with the cheese and breadcrumbs before serving).
