Ingredients:
- 1 pounds - ground sausage
- 1/2 - large onion OR 1 medium onion chopped
- 2 - or 3 large carrots peeled, halved, sliced
- 2 stalks - celery thinly sliced
- 2 cans - 16 oz. tomatoes (crushed or diced)
- 1 teaspoons - dried basil
- 1 teaspoons - dried oregano
- 1 teaspoons - crushed fresh garlic
- 1/4 teaspoons - ground black pepper
- 5 cups - beef broth
- 1 cans - 16 oz. navy or great northern beans rinsed and drained
- 6 ounces - twirly pasta
Directions:
Place the sausage in a 4-quart pot and brown over medium heat, stirring constantly to crumble, until the meat is no longer pink. Drain off any excess fat.
Add the onion, carrot, celery, tomatoes and seasonings along with beef broth to the pot, and bring to a boil over high heat. Reduce heat to low, cover and simmer until vegetables are tender.
Add the beans and pasta to the pot, cover and simmer for 6 to 8 minutes, or just until the pasta is al dente (be careful not to overcook, as the pasta will continue to soften as long as it remains in the hot soup).
May serve with fresh parmesan to sprinkle on top.
