Pasta Fagioli (a la Olive Garden)

Ingredients:

  1. 1 pounds - Ground beef 1 to 1 1/3 lb
  2. 1 cups - White onion diced
  3. 1 cups - Celery diced
  4. 1 cups - Matchstick carrots
  5. 15 ounces - Diced tomatoes 1 can
  6. 15 ounces - Dark red kidney beans 1 can
  7. 15 ounces - Cannellini beans 1 can
  8. 1 jars - Spaghetti sauce
  9. 8 cups - Beef broth/stock
  10. 1 teaspoons - Dried oregano
  11. 3/4 teaspoons - Ground black pepper
  12. 1/2 teaspoons - Tabasco/other hot sauce
  13. 1 cups - Ditalini or other small pasta
  14. 1/3 cups - Fresh parsley minced

Directions:

1. In a large pot, heat ground beef over medium heat until beef begins to brown. Add onions, carrots, celery and tomatoes and simmer for about 10 minutes.
2. Drain and rinse beans and add to pot. Add beef broth, oregano, pepper, spaghetti sauce and noodles. Simmer until vegetables are tender and noodles are cooked, about 45 minutes.
3. Stir in fresh parsley. Serve and enjoy.
