Parmesan Olive Biscuit Bites

Ingredients:

  1. 2 cups - flour
  2. 4 tablespoons - unsalted butter cut into pieces, softened
  3. 2 tablespoons - sugar
  4. 2 teaspoons - baking powder
  5. 1/2 cups - chopped green olives
  6. 1 - egg beaten
  7. 1/8 teaspoons - salt
  8. 1/3 cups - Parmesan cheese
  9. 2/3 cups - milk
  10. - coarse salt for sprinkling over top
  11. 2 cups - flour

  15. 1/2 cups - chopped green olives
  16. 1 - egg beaten
  17. 1/8 teaspoons - salt
  18. 1/3 cups - Parmesan cheese
  19. 2/3 cups - milk
  20. - coarse salt for sprinkling over top

Directions:

Preheat the oven to 400 degrees F.

In a medium bowl, add the flour, and then cut the butter pieces into the flour (you can use a fork or your fingers or a pastry blender). Add the sugar, baking powder, salt, and Parmesan cheese and mix well.

Add the chopped olives and stir until combined. Pour in the milk, a little at a time, and stir until the mixture forms a dough. Don't worry if you don't quite use all the milk.

Pull out a chunk of the dough, roll it into a long snake shape, and cut into bite sized pieces. Repeat until all the dough has been rolled and cut.

Place the pieces on parchment paper on a baking sheet (or spritz baking sheet with cooking oil if you don't have parchment paper).

Brush the pretzel bites with the beaten egg. Sprinkle with coarse salt. Bake for 12-14 minutes.

Serve warm with mustard for dipping, if desired.
