Ingredients:
- 1 tablespoons - Extra virgin olive oil
- 1/2 whole - white or yellow onion diced
- 1 tablespoons - garlic minced
- 8 whole - eggs
- 1/2 cups - milk of choice
- 3/4 teaspoons - salt
- 1/2 teaspoons - dried oregano
- 1/2 teaspoons - dried basil
- 1/4 teaspoons - cayenne pepper
- 1/4 teaspoons - ground mustard
- 2 whole - roasted red peppers jarred
- 3/4 cups - shredded mozzarella
- 3/4 cups - grated parmesan
- 2 tablespoons - fresh parsley chopped
- 1/4 teaspoons - black pepper
Directions:
1. Preheat oven to 425 degrees
2. Heat iron skillet on medium-high with olive oil in it and add diced onion was hot. Stir onions to saute. Add garlic and saute until golden
3. Whisk eggs, milk, salt, oregano, basil, cayenne pepper, ground mustard, and black pepper
4. Spread the onions/garlic evenly on the bottom of the skillet and remove from the heat
5. Add roasted red pepper to the skillet and layer mozzarella, parmesan, and chopped parsley on top
6. Pour egg mixture into skillet
7. Bake until the center is set, 16-20 minutes. Check the center to make sure it isn't too wiggly in the middle and then let it sit for a few minutes before enjoying!
