Parmesan Chicken with Sweet Balsamic Reduction

Braised chicken, seasoned with parmesan and herbs, cooked in the crockpot (to not heat up the kitchen) and served with a balsamic reduction sauce drizzled over top. Serve with steamed broccoli, spinach, or roasted potatoes for a complete meal.

Ingredients:
- 12 - chicken tenderloins
- 1/4 cups - extra virgin olive oil
- 1/4 cups - grated Parmesan cheese
- 2 tablespoons - minced oregano
- 2 cloves - garlic minced
- - salt and pepper
- 1/2 cups - balsamic vinegar
- 2 tablespoons - honey
Directions:
1. In a large bowl or ziploc bag, toss the chicken tenderloins with the olive oil, Parmesan cheese, garlic and oregano. Heat a non-stick skillet to medium-high heat and lightly brown the chicken pieces, about 3 minutes on each side.
2. Place chicken pieces in a crockpot or slow cooker set to low heat, and cook for 3 hours until tender and cooked through. (Alternatively, heat oven to 400 degrees F and place chicken pieces on a baking sheet; bake for about 35 minutes until cooked through).
3. Meanwhile, in a small saucepan stir together the balsamic vinegar and honey and place over high heat. Bring to a boil while stirring regularly; reduce heat to low and simmer until the vinegar mixture has reduced and thickened (about 10-15 minutes). Remove from heat and allow to cool slightly to further thicken.
4. Place chicken on serving plates and spoon sauce over the top to serve.
