Parmesan Chicken and Rice

Ingredients:

  1. 1 tablespoons - olive oil
  2. 1/2 cups - chopped onion
  3. 1 teaspoons - minced garlic
  4. 1/2 teaspoons - dried thyme
  5. 1 packages - (8-ounce) mushrooms sliced
  6. 3/4 pounds - skinless, boneless chicken breast cut into bite-sized pieces
  7. 1/2 cups - dry white wine
  8. 1/2 teaspoons - salt
  9. 1/4 teaspoons - freshly ground black pepper
  10. 1 cups - uncooked instant rice
  11. 1 cups - chicken broth (fat-free, low-sodium)
  12. 1/2 cups - grated fresh Parmesan cheese
  13. 1/4 cups - chopped fresh parsley

Directions:

Heat oil in a large nonstick skillet over medium-high heat. Add the onion, garlic, thyme, and mushrooms; sauté 5 minutes or until onion is tender.

Add chicken; sauté 4 minutes or until the chicken is lightly browned. Add wine, salt, and pepper; cook 3 minutes or until liquid almost evaporates.

Stir in rice and broth. Bring to a boil; cover, reduce heat, and simmer 5 minutes or until liquid is absorbed.

Stir in cheese and parsley, and serve.
