Parmesan Baked Salmon

Ingredients:

  1. 1/4 cups - grapeseed oil vegenaise
  2. 2 tablespoons - grated parmesan (I use Beyond Organic cheese instead, because it is really raw)
  3. 1/8 teaspoons - ground red pepper (cayenne)
  4. 4 - salmon filets (1 lb)
  5. 2 teaspoons - lemon juice
  6. - whole-grain sprouted-grain bread crumbs

Directions:

Mix first 3 ingredients in a bowl and set aside.

Preheat oven on broil with a cast iron griddle inside about 7 minutes. Remove griddle from oven. Put salmon on griddle skin-down. Squeeze lemon juice over salmon. Top with cheese mixture. Sprinkle with bread crumbs.

Return to the oven to cook about 7 minutes or till fish flakes easily with a fork.
