Parmesan and Roasted Red Pepper Strata

Ingredients:

  1. 1 loaves - French bread cut into 1/2-inch slices
  2. 2 jars - red peppers drained and cut into 1/2-inch pieces
  3. 1 cups - grated Parmesan
  4. 1 cups - sliced green onions
  5. 3 cups - grated mozzarella
  6. 8 - eggs
  7. 3/4 cups - milk
  8. 7 ounces - pesto
  9. 2 teaspoons - minced garlic
  10. 3/4 teaspoons - salt

Directions:

Arrange half of bread slices in greased baking dish. Top with half of red peppers, Parmesan, green onions, and mozzarella. Repeat layers.

Combine eggs, milk, pesto, garlic and salt. Pour over strata.

Refrigerate overnight. Bake at 350 degrees F uncovered for 30 minutes.
