Ingredients:
- 4 - large tomatoes
- 1 - white onion cut in half
- 4 cloves - garlic
- 1 - jalapeno pepper
- 1/2 - serrano pepper
- 1/2 cups - cilantro leaves stems removed, optonal
- 1 1/2 teaspoons - kosher salt
- 1/2 teaspoons - freshly cracked black pepper
- 1 - canned chipotle pepper Optional, smoky flavor
Directions:
Preheat oven to 450 degrees F.
Place tomatoes (whole), onion, garlic, jalapeno, chipotle and serrano on a foil-lined baking sheet.
Roast on the top rack for about 10 to 12 minutes or until the outside of the vegetable begin to char and darken. Remove from oven.
Place ingredients in blender or food processor; add cilantro, salt and pepper.
Puree for about 15 - 30 seconds for a chunky consistency (or more if you like it a little smoother).
Serve slightly warmed (because it's the BEST this way!)
