Ingredients:
- 8 ounces - Pappardelle pasta
- 1/3 cups - olive oil
- 3/4 pounds - cremini mushrooms sliced
- 5 cloves - garlic finely chopped
- 7 1/2 teaspoons - fish sauce
- - shaved Parmesan cheese
- - chopped chives optional, for garnish
Directions:
In a large pot, cook pasta in boiling salted water until cooked through but not soggy. Drain; reserve 1/3 cup of cooking water.
Meanwhile, in a large skillet, heat oil over medium-high heat. Cook mushrooms until golden, about 8 minutes; season with salt and pepper.
Stir in garlic, fish sauce, drained pasta and reserved water; season as desired.
Top with Parmesan and chives before serving.
