Pappardelle with Mushrooms and Parmesan

Ingredients:

  1. 8 ounces - Pappardelle pasta
  2. 1/3 cups - olive oil
  3. 3/4 pounds - cremini mushrooms sliced
  4. 5 cloves - garlic finely chopped
  5. 7 1/2 teaspoons - fish sauce
  6. - shaved Parmesan cheese
  7. - chopped chives optional, for garnish

Directions:

In a large pot, cook pasta in boiling salted water until cooked through but not soggy. Drain; reserve 1/3 cup of cooking water.

Meanwhile, in a large skillet, heat oil over medium-high heat. Cook mushrooms until golden, about 8 minutes; season with salt and pepper.

Stir in garlic, fish sauce, drained pasta and reserved water; season as desired.

Top with Parmesan and chives before serving.
