Notes:
You can put more toppings on the tomato toast (shredded cheese, ham, spinach), but it will be delicious as is. A little like bruschetta!

Ingredients:
- 1 - very ripe tomato
- 4 - slices of bread (I like sourdough for this.)
- 1 cloves - garlic
- - olive oil

- 1 cloves - garlic
- - olive oil
Directions:
1. Cut the tomato in half and grate the insides into a bowl. Dispose of the skin.
2. Toast the bread.
3. Drizzle olive oil on one side of the toast.
4. Cut the garlic clove in half and rub it on the toast. (The toast will grate it a little.)
5. Spread the grated tomato on top. Eat right away (before it gets soggy).
