Paleo Pork Egg Roll in a Bowl

Ingredients:

  1. 2 tablespoons - sesame oil
  2. 3 cloves - garlic minced
  3. 1/2 cups - onion diced
  4. 5 - green onions (white and green parts) sliced on a bias
  5. 1 pounds - ground pork
  6. 1/2 teaspoons - ground ginger
  7. - sea salt and black pepper to taste
  8. 1 tablespoons - Sriracha or garlic chili sauce (omit or use compliant brand for Whole30) or more to taste
  9. 14 ounces - bagged coleslaw mix
  10. 3 tablespoons - coconut aminos or gluten-free soy sauce
  11. 1 tablespoons - unseasoned rice vinegar
  12. 2 tablespoons - toasted sesame seeds

Directions:

Heat the sesame oil in a large skillet over medium high heat. Add the garlic, onion, and white portion of the green onions. Sauté until the onions are translucent and the garlic is fragrant.

Add the ground pork, ginger, salt, pepper and Sriracha. Sauté until the pork is cooked through.

Add the coleslaw mix, soy sauce, and rice vinegar. Sauté until the coleslaw is tender.

Top with green onions and sesame seeds before serving.
