Ingredients:

  1. 2 packages - 9-oz each frozen Rock Lobster Tails
  2. 1 whole - Broiler-Fryer (2.5 to 3.5 lbs.) Cut up
  3. 1 tablespoons - Flour
  4. 3 tablespoons - Olive oil
  5. 1 1/2 teaspoons - Salt
  6. 1/4 teaspoons - Pepper
  7. 1/2 cups - Frozen chopped onion
  8. 1 whole - Tomato Cut in eights
  9. 1/2 teaspoons - Garlic powder
  10. 1/4 teaspoons - Saffron
  11. 2 cans - 13 3/4-oz each Chicken broth
  12. 1 3/4 cups - Uncooked converted rice
  13. 1/2 pounds - Frozen shelled and deveined shrimp
  14. 1 packages - 10-oz pkg frozen peas
  15. 2 whole - Pimentoes Cut in strips

Directions:

1. Set lobster out to thaw.

2. Dust chicken w/ flour and brown quickly in hot oil in a Dutch oven. Sprinkle w/ salt, pepper, and onion.

3. Cut lobster in half crosswise; remove undershell w/ scissors. Bend back shells to make tails lie flat.

4. Add lobster, tomato, garlic, saffron and broth to chicken. Simmer, covered, for 10 minutes. Add rice; simmer 10 min. more. Stir gently. Add rice; add remaining ingredients. Simmer, covered, for 15 more minutes.
