Oven to Grill Baby Back Ribs

Ingredients:

  1. 2 racks - pork loin back ribs about 3 pounds each
  2. 1 cups - cider vinegar
  3. 6 tablespoons - mildly spiced barbecue rub
  4. - barbecue sauce
  5. 1/4 cups - brown sugar firmly packed
  6. 1/4 cups - sweet paprika
  7. 4 tablespoons - kosher or coarse sea salt
  8. 2 tablespoons - ground black pepper
  9. 1 tablespoons - smoked Spanish paprika
  10. 1 tablespoons - garlic powder
  11. 1 tablespoons - onion powder
  12. 1 tablespoons - dry mustard
  13. 1 teaspoons - celery seed

Directions:

For barbecue rub: Mix all of rub ingredients together in a bowl, mixing with fingers, breaking up any lumps. Store rub in an airtight container away from heat or light; it will keep for several weeks. Use about 2 tablespoons of rub per rack of baby back ribs. Makes about 1-1/4 cups.
For ribs: Dip rib racks in cider vinegar (or pour cider vinegar over ribs). Transfer ribs to parchment-lined roasting pan or rimmed baking sheet large enough to hold them in a single layer. Sprinkle barbecue rub over both sides of ribs, rubbing it onto the meat; apply more rub on the meaty side. The ribs may be prepared 8 hours ahead, wrapped in plastic wrap and refrigerated until ready to cook.
Preheat oven to 300 degrees fahrenheit. Arrange ribs meaty-side up in baking sheet or pan. Place sheet of parchment over ribs so that it doesn't have direct contact with the aluminum foil you will use to cover the pan (this avoids discoloring the rub). Cover the pan tightly with a wide sheet of heavy-duty aluminum foil. Bake for 3 to 3-1/2 hours, or until meat has shrunk from the ends of the bones by about 1/4 to 1/2 inch. (May be prepared to this point up to one day ahead of serving, covered with foil or plastic wrap, and refrigerated). Larger rib racks may require additional cooking time.
Heat a grill to high heat. Close grill for a few minutes, then open it and scrap grill grate clean. Oil grill grate to prevent sticking. Brush meaty side of ribs with barbecue sauce. Turn heat down to medium, and using tongs, place rib rack meaty side down over medium heat. Grill for 4 minutes. Brush the other side with barbecue sauce, turn rack over with tongs, and grill for another 3 minutes. Turn rack over again so meaty side is up. Brush with more barbecue sauce. Close grill and cook for another 5 minutes or so, until sauce is baked on. Remove racks from the grill.
Using a sharp knife, cut ribs into single or double rib sections. Serve immediately.
