Oven-roasted Salmon

Ingredients:

  1. 1 whole - 1-lb. salmon fillet
  2. 2 tablespoons - Dijon mustard
  3. 2 teaspoons - White wine vinegar or rice vinegar
  4. 1 tablespoons - Fresh dill Finely chopped
  5. - Salt, to taste
  6. - Pepper, to taste

Directions:

1. Heat oven to 365.
2. Lightly coat bottom of baking dish w/ olive oil or vegetable oil. Place salmon in baking dish.
3. Whisk together Dijon mustard, vinegar and dill. Cover salmon w/ mustard mixture. Sprinkle with salt and pepper.
4. Bake for 25 min. Turn on broiler and cook for another 2-3 min. to crisp the top.
