You can make this dish with just about any combination of vegetables, so use it to clean out your fridge. If you have any red or green peppers, they are a great addition cut in 1-inch chunks. I have made this with just chicken, onions, potatoes, carrots and the herbs and it was good, but the other ingredients and garlic add a lot of color and taste, so give them a try even if you're not a veggie person. If you don't have the herbs de Provence, you could use Italian seasoning.

Ingredients:
- 1 - large onion cut in wedges
- 8 - small red potatoes halved
- 1 pounds - baby carrots halved
- 1 cups - grape tomatoes
- 2 - small zucchini cut in half-inch slices
- 8 cloves - garlic peeled and sliced
- 1 1/2 pounds - boneless, skinless chicken thighs cut in half
- 1/4 cups - olive oil
- 1 tablespoons - herbs de Provence
- 1 teaspoons - salt to taste
- 1/2 teaspoons - pepper to taste
Directions:
1. Put oven rack on lowest level and preheat to 400 degrees.
2. Place everything in large roasting pan and toss gently to coat.
3. Roast for 45 minutes.
