Thaw fillets prior to baking; thaw overnight in fridge or place in resealable bag in bowl of cold water to thaw last minute.

Ingredients:
- 4 - Mahi Mahi fillets thawed, if frozen
- 1/8 teaspoons - salt
- 1/8 teaspoons - pepper
- 4 tablespoons - unsalted butter
- 1 tablespoons - minced garlic
- 1 tablespoons - lemon juice plus a little extra
- 1 - lemon
Directions:
Preheat oven to 425 degrees F. Line a baking sheet with parchment paper, then grease the paper with a brushing of olive oil or some cooking spray.
Place fillets on prepped baking sheet. Season with salt and pepper.
Melt the butter; add minced garlic and lemon juice, stirring to combine. With a basting brush, brush the lemon-butter mixture over the fillets.
Slice one lemon into thin slices, remove any seeds and place on top of the fillets. Squirt fillets with a little extra lemon juice.
Bake for 20 minutes in preheated oven until the fillets are flaky and have reached internal temp of 137 degrees F.
Remove from oven. Brush the melted lemon-butter in the pan over the fillets once again.
Serve immediately.
Note: Be sure to thaw the Mahi Mahi fillets prior to baking. If you forget to thaw overnight, place fillets in a resealable bag in a bowl of cold water to thaw.
