Ingredients:

  1. - marinara or spaghetti sauce warmed, for serving with calzones
  2. 3 1/2 cups - all-purpose or bread flour plus a little more for rolling out dough
  3. 1 teaspoons - sugar
  4. 1 envelopes - dry yeast
  5. 2 teaspoons - kosher salt
  6. 1 1/2 cups - warm water about 110 degrees F
  7. 2 tablespoons - olive oil plus 2 teaspoons
  8. 4 cups - marinara or spaghetti sauce
  9. 2 packages - pepperoni
  10. 3 cups - mozzarella grated
  11. - sliced olives, mushrooms, peppers or other desired fillings
  12. 2 - eggs well-beaten

Directions:

For dough -

Combine the flour, sugar, yeast and kosher salt in the bowl of a stand mixer and combine. While the mixer is running, add the water and 2 tablespoons of the oil and beat until the dough forms into a ball. If the dough is sticky, add additional flour, 1 tablespoon at a time until the dough comes together in a solid ball. If the dough is too dry, add additional water 1 tablespoon at a time. Lightly flour a bowl and knead the dough to form a ball. Place in a greased bowl and cover on top of the stove or in a warm place for up to an hour or until the dough doubles in bulk.

Turn the dough out onto a lightly floured surface and divide into 8 equal pieces. Form each piece into a round ball. Lightly flour a smooth surface and roll each ball out into thin 8 inch discs. Set aside to rest.

For calzones -
Sprinkle cornmeal over pizza bricks, and place calzone dough discs onto pizza bricks (or use a greased cookie sheet sprinkled with cornmeal - but pizza bricks produce better flavor and texture).

On each disc, place about 1/3 cup of sauce, topped with several slices of pepperoni, topped with desired amount of mozzarella, and followed with a little dash of sauce on top for good measure - add other filling items as desired (place filling items from middle of disc towards one side, leaving approximately an inch around the edges for sealing).

Fold the dough over the filling ingredients and press edges together with fingers; then pinch the edges and fold upwards until calzones are sealed (see pictures).

Make 3 slits across the top of each calzone for releasing steam while baking. Brush tops of calzone with the beaten eggs.

Bake in 425 degree oven for about 20 minutes or until dough is crisp and browned; serve with heated marinara sauce and grated Parmesan, as desired.
