Our Best Bran Muffins

Ingredients:

  1. 1 1/4 cups - flour
  2. 2 1/2 cups - 40% Bran flakes
  3. 3 teaspoons - salt
  4. 3 teaspoons - baking powder
  5. 1/2 cups - sugar
  6. 1 1/4 cups - milk
  7. 1 whole - ripe banana
  8. 1 whole - egg
  9. 1/3 cups - shortening
  10. 1 1/4 cups - flour
  11. 2 1/2 cups - 40% Bran flakes
  12. 3 teaspoons - salt
  13. 3 teaspoons - baking powder
  14. 1/2 cups - sugar
  15. 1 1/4 cups - milk
  16. 1 whole - ripe banana
  17. 1 whole - egg
  18. 1/3 cups - shortening

Directions:

-Sift dry ingredients together; set aside
-Put bran flakes & milk into a mixing bowl; stir and let stand 2 minutes (or until cereal has softened.
-Add egg & shortening to bran & milk mixture, beat well.
-Add mashed banana and then dry ingredients to the mixture. Stir to combine
-Pour into 12 greased muffin tins.
-Bake at 400 degrees for 25 minutes, or until golden.
