    Like any good family recipe, this recipe was passed to us without any actual measurements. I have put in estimates based on what worked for me, but feel free to modify to your taste. When I think of these green beans, my mouth waters. You'll never taste anything better!

Ingredients:

  1. 1 bunches - fresh green beans
  2. 1 - onion finely chopped
  3. 3 - tomatoes (or 1 can of whole tomatoes)
  4. 1 packages - shoulder bacon
  5. 6 - mushrooms chopped
  6. 1 tablespoons - dried mustard
  7. 1/3 cups - cashews
  8. - kosher salt and black pepper to taste

Directions:

In one pot, cook the large bunch of fresh green beans until just tender.

In a second pot, boil tomatoes. When tomatoes are soft and tender, remove form the pot and remove skins. (Or skip this step completely if using a can of whole tomatoes).

In a third pan, fry the finely chopped onion in olive oil.

In a separate pan, fry chopped bacon until crisp. Remove bacon from pot and add chopped mushrooms into the same pot.

Combine cooked green beans, fried onions, boiled tomatoes, mushrooms, and powdered mustard. Cook for three minutes. Add salt and pepper to taste. (If this mixture is watery, pour the water off).

Topping: Slightly brown cashew nuts in a little olive oil in a pan.

Before serving, add cashew nuts throughout.
