This dish can also be served as a salad by allowing the orzo to cool before mixing in spinach, pine nuts and cheese.

Ingredients:
- 2 tablespoons - pine nuts
- 1 cloves - garlic
- 1 teaspoons - butter
- 1 3/4 cups - water
- 3/4 cups - uncooked orzo
- 1/4 teaspoons - salt
- 1 cups - tightly packed chopped fresh spinach
- 1/4 cups - grated parmesan cheese
Directions:
Spread pine nuts in a small skillet. Cook over medium heat 1-2 minutes or until lightly toasted, stirring often. Set aside.
Saute garlic in butter over medium heat for 1 minute. Add water, orzo, and salt. Bring to a boil. Reduce heat and cook for 12 minutes or until liquid is absorbed.
Stir in spinach, cheese and pine nuts. Serve hot.
