Orzo with Spinach and Pine Nuts

Ingredients:

  1. 2 tablespoons - pine nuts
  2. 1 cloves - garlic minced
  3. 1 teaspoons - butter melted
  4. 1 3/4 cups - water
  5. 3/4 cups - uncooked orzo (rice-shaped pasta)
  6. 1/4 teaspoons - salt
  7. 1 cups - tightly packed chopped fresh spinach
  8. 1/4 cups - grated parmesan cheese

Directions:

Spread pine nuts in a small skillet. Cook over medium heat 1-2 minutes or until lightly toasted, stirring often. Set aside.
Saute garlic in butter over medium heat for 1 minute. Add water, orzo, and salt. Bring to a boil. Reduce heat and cook for 12 minutes or until liquid is absorbed.
Stir in spinach, cheese and pine nuts. Serve hot.
