Orzo with Garlic-Ginger Spring Vegetables

Ingredients:

  1. 1 tablespoons - Olive Oil
  2. 2 tablespoons - Ginger root peeled, minced
  3. 3 cloves - Garlic crushed
  4. 2 cups - Baby Carrots
  5. 2 cups - Baby Zucchini sliced
  6. 1 - Red Bell Pepper seeded, chopped
  7. 1 - Yellow Bell Pepper
  8. 1 teaspoons - Chicken Bouillon granules
  9. 2 1/2 cups - Orzo cooked

Directions:

1. In a skillet, heat oil over low heat. Saute the ginger root and garlic until deep brown, 4-5 minutes.
2. Increase heat to high, add carrots. Stir fry adding zucchini, bell peppers and bouillon until veggies are tender crisp, about 3 minutes.
3. Add orzo, toss to combine. Serve immediately.
