Orzo and Broccoli Pilaf

Ingredients:

  1. 1/2 - small chopped onion
  2. 1 tablespoons - olive oil
  3. 1 cups - whole wheat orzo
  4. 2 cups - reduced-sodium chicken stock
  5. 1/4 teaspoons - salt
  6. 2 cups - broccoli florets steamed

Directions:

In a saucepan, cook chopped onion in olive oil over medium heat for about 2 minutes. Stir in the orzo, chicken stock (or broth) and salt. Simmer, covered, for about 8 minutes or until broth is absorbed. Stir in steamed broccoli florets and serve.
