Orange, Rosemary and Cranberry Bread

Ingredients:

  1. 2 1/2 cups - all-purpose flour
  2. 2/3 cups - sugar
  3. 1 1/2 teaspoons - chopped rosemary
  4. 1 teaspoons - baking powder
  5. 1/2 teaspoons - baking soda
  6. 1/2 teaspoons - kosher salt
  7. 3 - large eggs beaten
  8. 1/2 cups - olive oil
  9. 1/2 cups - fat-free plain yogurt (not Greek)
  10. 6 tablespoons - orange juice
  11. 1 tablespoons - orange zest
  12. 1 teaspoons - vanilla extract
  13. 1 cups - fresh or frozen cranberries

Directions:

1. Heat oven to 350° F. Lightly coat a 9"x5" loaf pan with cooking spray.

2. In a large bowl, whisk together flour, sugar, rosemary, baking powder, baking soda and salt.

3. In a medium bowl, stir together eggs, oil, yogurt, juice, zest, and vanilla until combined. Gently pour into flour mixture.

4. Fold in cranberries; pour into prepared pan.

5. Bake until toothpick inserted in center comes out clean, about 55 minutes. Remove from oven; cool for 20 minutes. Remove from pan; cool completely.
