Ingredients:

  1. 1 - six-rib loin of pork (about 3-1/2 pounds)
  2. 1 1/2 teaspoons - salt
  3. 1/2 teaspoons - pepper
  4. 1/2 teaspoons - leaf thyme crumbled
  5. 1/2 teaspoons - ground ginger
  6. 2 cloves - garlic sliced
  7. 2 cups - water
  8. 1 tablespoons - grated orange rind
  9. 1 cups - orange juice
  10. 1/4 cups - brown sugar
  11. 1 1/2 tablespoons - soy sauce
  12. 1 tablespoons - corn starch

Directions:

Rub pork with salt, pepper, thyme and ginger. Make incisions between ribs; insert garlic slices.

Place on rack in roasting pan; pour 1 and 1/3 cups water in pan. Roast for 1 hour at 325 degrees F.

Combine orange juice, orange rind, brown sugar and soy sauce; blend well. Reserve 2/3 cup for orange sauce.

Baste roast with glaze for 1-1/2 hours.

Sauce: Combine 2/3 cup reserved sauce with corn starch and cook until it bubbles.

Slice loin and serve with sauce.
