Orange Garlic Chicken with Tomatoes

Ingredients:

  1. 1 cups - long-grain white rice
  2. 1 teaspoons - grated orange zest
  3. 6 - small chicken thighs
  4. 2 teaspoons - olive oil
  5. - salt and pepper to taste
  6. 1 cloves - garlic finely chopped
  7. 1 pieces - ginger (1 inch) finely chopped
  8. 1/3 cups - orange juice
  9. 1 pints - grape tomatoes
  10. 1/4 cups - finely chopped cilantro leaves

Directions:

Heat oven to 425 degrees F. Cook rice according to package directions. Fluff and stir in the orange zest.

Meanwhile, heat a large skillet over medium heat. Rub chicken with oil, and season with salt and pepper. Place chicken in skillet skin side down and cook until golden brown and crisp, 10 to 12 minutes; flip and cook 1 minute more. Transfer to a plate.

Add garlic and ginger to skillet and cook, stirring, 1 minute. Add orange juice and cook, scraping bottom of skillet, for 1 minute. Add tomatoes and cook, tossing occasionally, for 3 minutes.

Place chicken pieces gently back into skillet with tomato mixture, and transfer skillet to oven; roast until cooked through, about 5 to 6 minutes.

Serve over orange rice and top with cilantro.
