Number of Servings:

Ingredients:

  1. 1 1/2 pounds - chicken thighs chopped
  2. 3 heads - broccoli chopped
  3. 5 cloves - garlic minced
  4. 1 1/2 teaspoons - fresh ginger grated
  5. 1 1/2 - large oranges juiced
  6. 3 tablespoons - coconut oil
  7. - sea salt to taste
  8. 1/2 cups - coconut aminos
  9. 6 tablespoons - filtered water
  10. 1/4 cups - honey
  11. -

Directions:

1. Chop chicken and broccoli. Mince garlic, grate ginger, and juice the orange.

2. Add coconut oil to a skillet over medium-high heat. Season chicken pieces with salt. Working in batches as needed, add chicken to the pan and brown on both sides.

3. Meanwhile, add garlic, orange juice, coconut aminos, water, honey and grated ginger to a small saucepan over medium-high heat. Mix together, then bring mixture to a boil. Reduce heat to a simmer and let cook until sauce thickens.

4. In a separate pot, steam the broccoli until just tender-crisp; drain and set aside.

5. Once chicken is browned and sauce has begun to thicken, pour sauce over chicken and cook for 4 to 5 minutes, until chicken finishes cooking through.

6. Add broccoli to chicken and cook for another 1 to 2 minutes; remove from heat and serve.
