Ingredients:
- 4 - boneless pork loin chops 5 oz each
- 1/4 teaspoons - salt
- 1/4 teaspoons - pepper
- 3/4 cups - red onion thinly sliced
- 1/4 cups - water
- 1/4 cups - cider vinegar
- 3 tablespoons - brown sugar
- 2 tablespoons - honey dijon mustard
Directions:
Sprinkle pork chops with salt and pepper. In a large nonstick skillet coated with cooking spray, cook pork over med heat for 4-6 mins on each side or until lightly browned. Remove and keep warm. Add the remaining ingredients to the skillet; stir to loosen browned bits. Bring to a boil ; cook and stir for 2 mins or until thickened. Return chops to the pan. Reduce heat; cover and simmer for 4-5 mins or until a thermometer reads 160.
