Ingredients:
- 1 - red onion sliced
- - garlic
- - olive oil
- 1 - large green pepper
- 1 - yellow pepper
- 12 slices - sandwich bread thin, cubed 3/4"
- 1/2 cups - parmesan cheese
- 4 - eggs
- 4 - egg whites
- 2 1/2 cups - skim milk
- 1/2 cups - parsley
- 1 - red onion sliced
- - garlic
- - olive oil
- 1 - large green pepper
- 1 - yellow pepper
- 12 slices - sandwich bread thin, cubed 3/4"
- 1/2 cups - parmesan cheese
- 4 - eggs
- 4 - egg whites
- 2 1/2 cups - skim milk
- 1/2 cups - parsley
Directions:
1. Oil a 13" x 9" baking dish.
2. Sauté the onion, garlic and peppers.
3. Spread 1/2 the bread in baking dish. Add 1/2 veg and 1/2 cheese. Repeat layers.
4. Whisk eggs, egg whites and milk and pour over all. Top with parmesan.
5. Chill 3-12 hours.
6. Bake in a 375° oven for 45-55 minutes until puffed and golden. Serve with salsa.
