Onion & Bell Pepper Strata

Ingredients:

  1. 1 - red onion sliced
  2. - garlic
  3. - olive oil
  4. 1 - large green pepper
  5. 1 - yellow pepper
  6. 12 slices - sandwich bread thin, cubed 3/4"
  7. 1/2 cups - parmesan cheese
  8. 4 - eggs
  9. 4 - egg whites
  10. 2 1/2 cups - skim milk
  11. 1/2 cups - parsley
  12. 1 - red onion sliced
  13. - garlic
  14. - olive oil
  15. 1 - large green pepper
  16. 1 - yellow pepper
  17. 12 slices - sandwich bread thin, cubed 3/4"
  18. 1/2 cups - parmesan cheese
  19. 4 - eggs
  20. 4 - egg whites
  21. 2 1/2 cups - skim milk
  22. 1/2 cups - parsley

Directions:

1. Oil a 13" x 9" baking dish.
2. Sauté the onion, garlic and peppers.
3. Spread 1/2 the bread in baking dish. Add 1/2 veg and 1/2 cheese. Repeat layers.
4. Whisk eggs, egg whites and milk and pour over all. Top with parmesan.
5. Chill 3-12 hours.
6. Bake in a 375° oven for 45-55 minutes until puffed and golden. Serve with salsa.
