Onion and Spinach Dip

Ingredients:

  1. 3 tablespoons - extra-virgin olive oil
  2. 1 - large chopped onion
  3. 1/2 pounds - chopped shallots
  4. 1/2 pounds - spinach chopped
  5. 3 ounces - cream cheese softened
  6. 16 ounces - sour cream
  7. 1/2 teaspoons - salt
  8. 1/4 teaspoons - pepper

Directions:

Saute onion and shallots in olive oil. Add spinach and cook for 2 minutes.

Stir in cream cheese, sour cream, salt and pepper. Chill for 1 hour.
