Ingredients:
- - olive
- 5 - italian sausage links, uncooked
- 28 ounces - crushed tomatoes
- 1 - onion thinly sliced. Jordan leaves this out
- 3 cloves - garlic minced, Jordan uses 4
- 1 1/2 teaspoons - dried basil
- 1 1/2 teaspoons - dried oregano
- 4 cups - vegetable broth use two cans, plus water to make 4 cups
- 1 pounds - rigatoni
- - parmesan cheese grated
Directions:
1. Add a splash of olive oil and the sausage links to a large, heavy-bottomed pot and cook over medium heat until they are browned on the outside. Remove from pot and slice sausage into rounds, then return to the pot and cook until fully browned.
2. To the same pot, add crushed tomatoes, onion, garlic, basil and oregano. Stir to combine, then add vegetable broth and rigatoni. Cover the pot, turn the heat up to high and bring the whole thing to a boil. Once it's boiling, give it a good stir and turn the heat to low; let it simmer on low for about 15 minutes. Stir pretty frequently.
3. After 15 minutes, the pasta should be done and the liquid should be absorbed. If not, cook for a few more minutes. Serve with parmesan cheese.
