One Pan Roasted Sausage and Veggies

Ingredients:

  1. 2 - large carrots thinly sliced into small rounds
  2. 2 - red potatoes diced into small pieces
  3. 1 - medium zucchini halved, cut into thick slices
  4. 2 - red peppers seeds and stem removed, chopped into medium pieces
  5. 1 - small head broccoli coarsely chopped
  6. 16 ounces - Italian turkey or chicken sausage sliced into thick coins
  7. 1/2 tablespoons - dried basil
  8. 1/2 tablespoons - dried oregano
  9. 1/2 tablespoons - dried parsley
  10. 1/2 tablespoons - garlic powder
  11. 1/2 teaspoons - onion powder
  12. 1/2 teaspoons - dried thyme
  13. 1/8 teaspoons - red pepper flakes optional
  14. - salt and pepper to taste
  15. 4 1/2 tablespoons - olive oil
  16. 1/3 cups - Parmesan cheese for topping, optional
  17. - fresh parsley for topping, optional
  18. - cooked rice or quinoa for serving with, optional

Directions:

Preheat oven to 400 degrees F. Line a large sheet pan with aluminum foil (or parchment paper) and set aside.

Place the prepped veggies and sliced sausage on the sheet pan.

In a small bowl combine all of the seasonings with the olive oil; stir to combine.

Pour the seasoning mixture on top of the veggies and sausage and thoroughly toss to coat everything well.

Place in the pre-heated oven for 15 minutes. Remove from oven; toss around the veggies and sausage and return to oven for another 10-20 minutes or until the vegetables are crisp- tender.

Remove and sprinkle Parmesan cheese and fresh parsley over top, if desired. Serve over cooked brown rice or quinoa. if preferred.
