Ingredients:
- 2 - large carrots thinly sliced into small rounds
- 2 - red potatoes diced into small pieces
- 1 - medium zucchini halved, cut into thick slices
- 2 - red peppers seeds and stem removed, chopped into medium pieces
- 1 - small head broccoli coarsely chopped
- 16 ounces - Italian turkey or chicken sausage sliced into thick coins
- 1/2 tablespoons - dried basil
- 1/2 tablespoons - dried oregano
- 1/2 tablespoons - dried parsley
- 1/2 tablespoons - garlic powder
- 1/2 teaspoons - onion powder
- 1/2 teaspoons - dried thyme
- 1/8 teaspoons - red pepper flakes optional
- - salt and pepper to taste
- 4 1/2 tablespoons - olive oil
- 1/3 cups - Parmesan cheese for topping, optional
- - fresh parsley for topping, optional
- - cooked rice or quinoa for serving with, optional
Directions:
Preheat oven to 400 degrees F. Line a large sheet pan with aluminum foil (or parchment paper) and set aside.
Place the prepped veggies and sliced sausage on the sheet pan.
In a small bowl combine all of the seasonings with the olive oil; stir to combine.
Pour the seasoning mixture on top of the veggies and sausage and thoroughly toss to coat everything well.
Place in the pre-heated oven for 15 minutes. Remove from oven; toss around the veggies and sausage and return to oven for another 10-20 minutes or until the vegetables are crisp- tender.
Remove and sprinkle Parmesan cheese and fresh parsley over top, if desired. Serve over cooked brown rice or quinoa. if preferred.
