One Pan Chicken and Balsamic Vegetables

Ingredients:

  1. 2 heads - Broccoli
  2. 1 cups - Baby carrots
  3. 1/2 pints - Cherry tomatoes
  4. 1 teaspoons - Italian seasoning
  5. 3 tablespoons - Light tasting olive oil
  6. 1/2 teaspoons - Garlic powder
  7. - Other seasonings optional
  8. 6 tablespoons - Balsamic vinegar
  9. 1/2 cups - Fat free Italian dressing
  10. 1 1/4 pounds - Chicken tenders

Directions:

1. Preheat oven to 400°. Spray sheet pan with cooking spray.
2. Whisk vinegar and Italian dressing.
3. Trim tenderloins.
4. Marinate chicken in 1/3 of vinegar mixture for at least 30 minutes.
5. Chop broccoli, halve carrots lengthwise, halve cherry tomatoes lengthwise.
6. Toss broccoli, carrots, and tomatoes with garlic powder, Italian seasoning, and any other chosen spices. Spread evenly on pan. Roast 10-15 minutes.
7. Rotate pan. Move veggies to sides of pan, place chicken in the center. Brush with 1/3 of the dressing.
8. Bake for 7-15 minutes, or until chicken is done. Serve with remaining dressing.
