Ingredients:
- 1 3/4 cups - warm water
- 6 tablespoons - sugar
- 1/4 cups - oil
- 3 packages - yeast (or 3 tablespoons)
- 1 1/2 teaspoons - salt
- 2 - eggs
- 5 cups - to 6 cups flour
- - a little oil for rolling out
- 1/3 cups - white sugar
- 1/4 cups - brown sugar
- 1 1/2 teaspoons - cinnamon
- 4 ounces - cream cheese softened
- 1 teaspoons - vanilla
- 2 1/2 cups - to 3 cups powdered sugar
- 3 1/2 tablespoons - heavy whipping cream
Directions:
In a large mixing bowl (or KitchenAid mixing bowl), combine warm water, sugar, oil and yeast. Stir a few times, then let sit for a full 15 minutes.
Preheat oven to 400 degrees F.
Add salt, eggs, and flour to the yeast mixture. Start with about three-fourths of the flour and mix in, gradually adding the rest of the flour.
Once all the flour is added, mix together for about 10 minutes. If dough is slightly sticky to the touch, let it sit for 10 minutes. If it is very sticky to the touch, mix for a few minutes longer before allowing it to sit. It should double in size, but will take longer if the kitchen is cold.
After it has doubled in size, pour a little oil on the counter top (instead of flour) to roll out the dough on. Press the dough into a large rectangle.
Melt butter for filling in a microwave-safe bowl and pour half of it onto the rectangle of dough. In a separate bowl, mix together white sugar, brown sugar, and cinnamon. Sprinkle this mixture over the melted butter.
Tightly roll the dough up into a lot and cut into 12 even pieces (I use unflavored dental floss to make the cuts - wrap it around the dough and then pull tightly across - like you would if tying a shoe - to cut through).
Place on baking tray (either greased or lined with parchment paper or silicone baking mat), and let rise a little more (as little as 5 minutes or as much as an hour, if you prefer).
Bake for 12 to 15 minutes in pre-heated oven.
While rolls bake, mix all ingredients for frosting together using a hand mixer until mixture is creamy and smooth.
When rolls finish baking, remove them from the oven, and allow to sit for a couple of minutes before slathering with frosting over the top, letting it melt into the rolls before serving.
