Ingredients:
- 1 teaspoons - butter (OR cooking spray)
- 2 - eggs
- 2 teaspoons - milk
- - salt and pepper
- 2 tablespoons - grated cheese
- 2 tablespoons - diced ham, turkey, cooked sausage or bacon
- 2 teaspoons - chopped green pepper (OR favorite veggie - pepper, tomato, spinach, mushroom, onion)
Directions:
In a large mug (or microwave-safe bowl), melt the butter in the microwave for 20 seconds and swirl around the mug to keep eggs from sticking (or spray it with cooking spray instead).
Place eggs, milk, and salt and pepper into mug and whisk or stir with a fork to combine. Stir in cheese, meat, and veggies.
Heat in microwave for 45 seconds; stir and heat again for 45 seconds. Stir. If needed, cook for 20 seconds more until cooked through.
Top with favorite toppings - salsa, more cheese, crumbled bacon, etc., and enjoy!
