Olive Garden Bruschetta

Ingredients:

  1. 3 - firm roma tomatoes
  2. 1 tablespoons - fresh basil
  3. 2 teaspoons - garlic
  4. 1 teaspoons - extra virgin olive oil
  5. 1 teaspoons - balsamic vinegar
  6. 1/4 teaspoons - salt
  7. 10 slices - ciabatta or Italian bread
  8. 1 tablespoons - parmesan cheese
  9. 1 pinchs - dried parsley flakes

Directions:

Toss diced tomatoes with basil, garlic, olive oil, vinegar and salt in a medium bowl. Cover and chill 1 hour.
When ready to serve dish, preheat oven to 450° F. Combine parmesan cheese with dried parsley in a small bowl. Arrange bread slices on a baking sheet. Sprinkle a couple pinches of parmesan cheese mixture over each bread slice. Bake for 5 minutes or until bread starts to crisp.
Pour tomato mixture into serving dish and serve alongside the toasted bread slices.
