Oatmeal Cake & Frosting

Ingredients:

  1. 1 1/2 cups - boiling water
  2. 1 cups - quick oats
  3. 1/2 cups - margarine
  4. 1 cups - brown sugar
  5. 1 cups - white sugar
  6. 1 - egg
  7. 2 - egg whites
  8. 1 teaspoons - vanilla
  9. 1 teaspoons - cinnamon
  10. 1 1/2 cups - flour
  11. 1/2 teaspoons - salt
  12. 1 teaspoons - baking soda
  13. 1/2 cups - nuts chopped
  14. 2 - egg yolks
  15. 1/4 cups - margarine
  16. 3/4 cups - brown sugar
  17. 1/2 cups - nuts chopped
  18. 3 tablespoons - milk
  19. 1 cups - coconut

Directions:

Pour boiling water over quick oats and let stand for 20 minutes.
Cream together margaraine, sugars, egg, egg whites, vanilla, and cinnamon.
Add flour, salt, baking soda, nuts, and soaked oats.
Mix all ingredients well and pour into greased and floured 9x13-inch baking pan. Bake about 30 minutes at 350° F.
Frosting: Combine egg yolks, margarine, brown sugar, nuts, milk and coconut, beating about 10 minutes by hand until thoroughly mixed. Spread over warm cake.
