Notes:
You could also add some raisins or dried cranberries for additional flavor. Make it sugar-free by replacing sugar with Splenda or Stevia.

Ingredients:
- 2/3 cups - sugar
 - 2 - egg whites
 - 1/2 teaspoons - vanilla extract
 - 1/2 cups - all-purpose flour
 - 1 teaspoons - baking powder
 - 2 cups - chopped apples like Granny Smith
 - 1/4 cups - chopped pecans
 
Directions:
Preheat oven to 350 degrees F. Coat an 8-inch square baking pan with cooking spray.
In a large bowl, whisk the egg whites, sugar, and vanilla for 1-1/2 minutes or until frothy. Whisk in flour and baking powder until blended. Fold in apples and pecans. Pour into prepared pan.
Bake 23 to 25 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
