No-Fuss Potato Soup

Ingredients:

  1. 6 cups - cubed peeled potatoes
  2. 4 cups - water
  3. 2 cups - chopped onions
  4. 1/2 cups - chopped celery
  5. 1/2 cups - thinly sliced carrots
  6. 1/4 cups - butter, cubed
  7. 4 teaspoons - chicken bouillon granules or 2 vegetable bouillon cubes
  8. 2 teaspoons - salt
  9. 1/4 teaspoons - pepper
  10. 12 ounces - evaporated milk
  11. 3 tablespoons - minced fresh parsley
  12. - Minced chives, optional

Directions:

In a 5-qt. slow cooker, combine the first nine ingredients. Cover and cook on low for 7-8 hours or until the vegetables are tender.

Add milk and parsley. Cover and cook 30 minutes longer or until heated through. Garnish with chives if desired.
