No-Bake Chocolate Quinoa Cookies

  1. 1/4 cups - coconut oil
  2. 1/4 cups - pure maple syrup
  3. 1/3 cups - unsweetened cocoa powder
  4. 1/2 cups - almond butter or nut/seed butter of choice
  5. 1/2 cups - cooked quinoa
  6. 1/2 cups - quinoa flakes
  7. 1/2 cups - coconut flakes
  8. - coarse sea salt optional, for sprinkling


Line a large baking sheet with parchment paper or wax paper and set aside.

In a small saucepan over medium heat, melt together coconut oil, maple syrup and cocoa powder. Whisk until combined. Add almond butter and stir again until smooth.

Remove saucepan from heat and stir in the quinoa, quinoa flakes and coconut flakes.

Using a cookie scoop, drop mixture in mounds onto prepared baking sheet, shaping slightly, as desired. Sprinkle with sea salt and place in freezer to set for about 30 minutes.

Store in an airtight container in the freezer for best results (if stored in the fridge, they will be a lot softer).
