Ingredients:

  1. 1/2 cups - Oil
  2. 1 dashes - Onion chopped
  3. 2 cups - Tomato chopped
  4. 1 tablespoons - Hot Curry Powder
  5. 1 teaspoons - Salt
  6. 1 cups - Water
  7. 6 - Hard Boiled Eggs Whole, peeled, and pierced with a fork

Directions:

In a large skillet, heat oil and saute onion until transparent, approximately 5 minutes.
Add tomatoes, curry power, salt, water, and eggs. Cover and simmer 10-15 minutes.
Serve immediately with sauce spooned over eggs. Note; eggs are pierced to absorb sauce while simmering.
