New Mexican Omelette

Ingredients:

  1. 8 whole - Eggs
  2. 2 tablespoons - Water
  3. 1/2 cups - Mushrooms
  4. 1/2 cups - Onion
  5. 1/2 cups - Green Chile
  6. 1/2 cups - Ham
  7. 1/2 cups - Swiss or Monterey Jack Cheese
  8. 2 tablespoons - Oil or Margarine

Directions:

Beat eggs in a large bowl; add water, mushrooms, onion, chile, ham, and cheese; blend well.

Heat oil or margarine in large skillet. Pour egg mixture into skillet and cook until solid. Serve immediately with hot flour tortillas.
