New England Shrimp Rolls

Ingredients:

  1. 2 cups - Cold, cooked large shrimp Thawed if frozen
  2. 3 tablespoons - Celery Diced
  3. 2 tablespoons - Fresh flat-leaf parsley Chopped
  4. 3 tablespoons - Mayonnaise More if needed
  5. - Kosher salt
  6. - Freshly ground pepper
  7. 4 - Hot dog buns Buttered & toasted

Directions:

1. Shell shrimp and cut each into 3 pieces.
2. Combine shrimp, celery, parsley and mayonnaise in a bowl. Season w/ salt and pepper; add more mayo if you prefer a creamier salad.
3. Butter and toast hot dog buns Divide mixture evenly among buns.
