Never-Fail Macaroni and Cheese

Ingredients:

  1. 2 cups - Macaroni or other pasta shape
  2. 4 teaspoons - Minced onion
  3. 6 tablespoons - Butter, divided use
  4. 3 tablespoons - Flour
  5. 2 cups - Milk
  6. 1 teaspoons - Dijon mustard
  7. - Salt, to taste
  8. - Pepper, to taste
  9. 2 cups - Shredded extra-sharp cheddar cheese Reserve some for the top
  10. 1/2 cups - Dry breadcrumbs

Directions:

1. Cook the pasta according to pkg. directions; drain.

2. Heat oven to 350. In a skillet over medium heat, saute onion in 3 T butter until translucent. Stir in flour and mix well. Stir in milk. Cook, stirring over low heat until slightly thickened.

3. Add the mustard, salt, pepper and cheese; cook until the cheese is melted. Do NOT boil as mixture will curdle if the heat is too high.

4. Add pasta and stir to coat w/ cheese sauce. Pour mixture into a 3-qt. casserole. Top w/ reserved cheese and breadcrumbs and dot w/ remaining 3 T butter.

5. Bake for 20 min.
