Neiman Marcus White Meat of Chicken Salad

Ingredients:

  1. 5 pounds - Chicken breasts
  2. 3 stalks - Celery
  3. 1 whole - Large onion Quartered
  4. 2 whole - Large carrots Quartered
  5. - Several whole black peppercorns
  6. 1 whole - Bay leaf
  7. - Salt and white pepper
  8. 1/4 cups - Apple cider vinegar
  9. 1 cups - Celery Finely diced
  10. 3/4 cups - Half and half
  11. 2 1/4 cups - Mayonnaise (real mayo)

Directions:

1. Cook the chicken breasts in 3 qts. water with the 3 celery stalks, onions, carrots, peppercorns, bay leaf and sprinkling of salt and pepper until they are well-cooked and tender. Cool, skin and debone the chicken; place in refrigerator to chill.
2. After chilled and somewhat firm, dice chicken an sprinkle with apple cider vinegar. Add diced celery.
3. Blend together half and half, mayonnaise and salt and white pepper to taste. (NOTE: White pepper is strong; use sparingly.) Fold this mixture into the chicken mix and adjust salt and pepper seasoning if needed.
4. Keep chilled until ready to serve.
