Mustard Aioli Grilled Potatoes with Herbs

Ingredients:

  1. 1/2 cups - Mayonnaise
  2. 2 cloves - Garlic Smashed to a paste
  3. 1 tablespoons - Heaping T Dijon mustard
  4. 1 tablespoons - Heaping T whole grain mustard
  5. - Kosher salt
  6. - Freshly ground pepper
  7. 2 1/2 pounds - Baby Yukon gold potatoes
  8. 2 tablespoons - Fresh flat-leaf parsley Chopped
  9. 1 tablespoons - Fresh chives Chopped
  10. 1 tablespoons - Fresh tarragon Chopped

Directions:

1. Whisk together mayonnaise, garlic an both mustards in a bowl; season w/ salt and pepper. Cover aioli and refrigerate at least 30 min. and up to 1 day.
2. Meanwhile, put pottoes in a pot, cover w/ cold water by 2 inches, and add 2 T. salt. Bring to a boil and cook 15 to 20 min. ( a skewer inserted into a potato should meet some resistance). Drain and let cool slightly.
3. Heat grill to medium for direct grilling. (Gas grill: Turn on all burners. Charcoal grill: Rake coals into an even layer.)
4. Put potatoes in a large bowl, toss with aioli, and season w/ salt. Grill until golden brown on all sides, about 8 minutes.
5. Transfer potatoes to a platter, sprinkle w/ herbs and season w/ salt and pepper.
