Mushrooms Stuffed with Ham and Cheese

Ingredients:

  1. 1 1/2 teaspoons - salt
  2. 1/2 - lemon
  3. 36 - large mushrooms stems removed, chopped and reserved
  4. 1/2 cups - prosciutto minced
  5. 1/3 cups - minced salami
  6. 3/4 cups - boiled ham minced
  7. 2 tablespoons - fresh parsley
  8. 1/8 teaspoons - thyme
  9. 1/8 teaspoons - oregano
  10. 1/4 teaspoons - dried sage
  11. 1/4 teaspoons - dried basil
  12. 1/4 teaspoons - freshly ground black pepper
  13. 1/2 cups - grated Fontina cheese
  14. 1 1/2 cups - Parmesan cheese
  15. 2/3 cups - chicken stock

Directions:

Add lemon juice from lemon to 3 quarts of salted, boiling water. Add mushrooms and cook 8 minutes. Drain on paper towels.

Combine remaining ingredients in bowl with 1 cup of the Parmesan cheese.

Pack mushroom caps with mixture and arrange in a baking pan. Add stock and bake at 350 degrees F for 10 minutes.

Pour off the stock; sprinkle tops with Parmesan cheese, and set under broiler until lightly browned.
